Raw Vegan Energy Bars with a Cherry Drizzle Glaze! Low-fat, nut free, and oil-free! These snacks are perfect to bring with you to work, school, athletic races, on-the-go, or even traveling! Unprocessed and freshly made…only pure energy here: http://youtu.be/z2F5lkTtNAc.
Ingredients for the Energy Bars:
1-2 cups dried mulberries
2 cups dried figs
2 cups pitted dates
1-2 tsp. of freshly ground cinnamon
Place all ingredients in the food processor and pulse until the mixture reaches a cookie dough consistency. Take out the mixture, and press it into a pyrex or glass pan to form it. When ready, remove it from the pyrex and slice into bar chunks to make your energy bars. You can serve them just like this (ooey guey), or you can chill them in the fridge for anywhere from 30 minutes to 3-4 hours to harden them. Get ready for the cherry drizzle!
Ingredients for the Cherry Drizzle:
2 cups pitted cherries
1 cup pitted dates
Optional: half cup of fresh coconut water
Blend both ingredients until smooth! Drizzle or spread on top of the energy bars! Pack, serve, and enjoy!
